Darwin does it again!
Darwin Santa Maria is no stranger to the dining circuit in Sarasota.  For over a decade, Darwin has provided Sarasota diners with innovative, upscale, and sophisticated Latin cuisine; first at Selva Grill, then the Cottage, and now at his newest spot, Darwin’s on 4th.Darwin’s on 4th is located in the former space of The Rustic Grill and The Mad Crow Brewery.  Although the entire space is large, it is well divided into smaller areas: bar, upstairs dining and lounge, and the main dining room with open kitchen.  Warms colors, well placed art work, good lighting, and nicely appointed tables and chairs all make for a “small feel” environment.

The menu offers a wide range of options including seafood, beef, poultry, and vegetables served in various styles and presentations. For our meals we chose the following:

Plantain Chips with Chimichurri:  $6.00
Great starters to any meal.
Pollo Anticuchos:  Two skewers of chicken breast, rocoto pesto.  $6.00
A well-seasoned, very flavorful chicken appetizer.
Chicharron De Calamar:  Fried calamari, tartar sauce, sweet chili sauce.  $9.00
Very fresh, lightly battered and fried, flavorful, chili sauce is superb.
Shrimp Spring Rolls:  Creamy shrimp, avocado aioli, sweet chili sauce.  $9.00
One of my faves…crisp and full of flavor.
Alitas De Pollo:  Chicken wings, lime, soy sauce, sweet chili, seaweed salad.  $6.00Sweet and delicious, a great Latin rendition of the classic wing

“Lima” Chopped Salad:  Romaine lettuce, carrots, avocado, tomato, garbanzo beans, cucumbers, green beans, tahini dressing.  $6.00

Fresh, well prepared, very refreshing dressing, wonderful mixture of textures.
Darwin’s Classic Ceviche:  Seasonal fish, leche de tigre, red onions, cilantro, glazed sweet potatoes, cancha, cuzco corn skewer.  $14.00
Bright citrus flavors, wonderful textures, tastefully tangy.
Darwin’s Tuna Tiradito:  Fresh tuna sashimi, ginger soy sauce, cubes of fresh watermelon, leche de tigre.  $14.00
Absolutely one of my favorites, great combination of flavors and textures.
Wahoo Tiradito:  Wahoo sashimi, ginger aioli, cucumber, mango, seaweed salad, ponzu sauce.  $12.00
Fresh and flavorful, nice mix of textures.
Pato:  Grilled duck breast, cilantro and green pea risotto, criolla toasted red peppers.  $26.00
Wonderfully seasoned duck, full of flavor; risotto lacked depth of flavor.

We found the staff to be extremely knowledgeable, able to explain the food preparations, and offer advice. Service was fast and efficient.  Darwin’s on 4th offers a full bar service with specialty drinks, wine, and micro-brewed craft beers.  Jared Barnes, a brew master from Southern Tier Brewing Company, has joined Darwin and is already planning the 1st batch of brew.  This will be an exciting addition designed to complement the current cuisine.
