When I go to bind my qbittorrent to something in the settings, it gives me these options:
I think it’s either Ethernet or Nordlynx that I should connect to. Because I checked, and it actually seems like my internet is coming through the Ethernet connection when I have my VPN turned on, so I thought I should connect to that. However, all the instructions for binding qbittorrent to a VPN say that you should pick the thing that has the name of the VPN. Which makes me think it would be Nordlynx, but Nordlynx never seems to be connected and I’m not sure why it’s there. Thank you.

Ethernet - If you don’t want to connect through VPN
NordLynx - If you want to connect through VPN. Note that, even when you are using VPN, your data still has to flow through Ethernet. If VPN is down, qBT won’t work.
I used my Network Connections center to see which connection was active after turning on my VPN, and it showed the Ethernet connection coming online but not the NordLynx one–this is what I saw. Edit: Image didn’t load right, going to link to it on imgur.

So NordLynx adapter had a red x and said it was unplugged?
If that’s the case, using NordLynx adapter wont help in downloading.
Looks like it is Tap-NordVPN windows adapter. But I don’t know why it is named as “Ethernet”. Better rename this to something else and check if also have any other adapter named “Ethernet”.
Can you please post the entire adapter list screenshot. Your main NIC may not be Ethernet.
